Don’t get me wrong. I absolutely love food and cooking. Making an elaborate, multi-step dish or dessert always makes me feel like a mad scientist at work, in the best way possible. When it all comes out right (and receives a standing ovation/round of applause from friends and family), I feel like I’ve decoded and overcome the greatest experiment to man.
That being said, I’m lazy. Like, I really am lazy and I never cook things the same day I plan to eat them. For everyday meals, I prefer efficiency and simplicity. I usually cook up a large batch of food items from brown rice to roasted veggies and some form of lean protein on Sunday so I can eat them throughout the week. A simple reheat and use of condiments is enough to satisfy me until the weekend when I feel like being more adventurous.

In situations like that, I like to whip something up with the least amount of ingredients and instructions as possible. This is due to multiple reasons besides laziness. This includes: A) Not wanting to spend $50+ for just one recipe, and B) I need immediate satisfaction because I have the appetite of a cave man.
