They’re small, they’re tan, they look like miniature Kewpie doll heads. They’re…chickpeas! (Or garbanzo beans if you want to eat something that sounds like a Luchador’s nickname.)

For young me, chickpeas were always the strange, smelly brown beans that they had on our salad bar at school and nobody seemed to eat except the teachers. I eventually grew into a hummus loving adult and thought, “Hmm…what else is there to these beans?” And after years of contemplation and searching, I have found some of the greatest things to do with chickpeas (that you should try as soon as possible.) Some of them are even gluten free and [mostly] healthy!

I’m going to start with my favorite because it’s possible that these chickpea blondies changed my life for the better. Chocolate chip blondies are one of the best type of cookies, am I right? They’re cookies, but EVERY PART is the squishy middle bit. So when I found out that I could make these without flour and they would taste eight times better than regular blondies (and not to mention be that much more chewy), I could not believe my luck. Bonus: the dough is egg-free, so you can basically eat all of it and your mom won’t worry about you contracting salmonella, like moms do. Although, our editor is pretty sure that is a [sub]urban myth moms made up to stop us from eating all the dough before they made it in the oven…
