I have a huge confession to make. I am vegan! Gasp! Gawk! Guffaw! (Do people say that anymore?) In any case, the second I tell someone this they assume I know nothing about food, can’t possible be a “foodie” and eat lettuce all day probably from the hay pen I came from.
Wrong.
I love food and I know good food when I taste it. In addition, I do not hate non-vegans and understand that it might not be the easiest or best move for everyone. You know what I don’t get and makes me mad, though? When people think I will eat just any ol’ piece of wilted lettuce and tofu-from-the-box crammed between two pieces of bread just because. That is something I will not stand for. So, to remedy this I am presenting the world with some vegan lunches that do not suck. Big on taste and satisfaction, it may even convince meat-lovers to have a vegan lunch once or twice a week. After you see these food porn-ish pictures we know you’ll secretly whip these up at home. Don’t lie.
